Influence of the study of times and movements in the productivity in the filleting area in a fish canning plant.

Abstract

The present study was to apply the study of times and movements to increase productivity, for this reason, the research was of an applied type, of pre-experimental design, made up of a sample of 25 collaborators from the filleting area, found by means of the population reduction technique. For the diagnosis, a line balance was made, in which it was determined that the area that generated the greatest bottleneck was the filleting area, having an idle time of 73 minutes between stations D and E, therefore, productivity initial was not expected, having an average 5.50 kg / hh, for this reason alternatives for improvements were established based on the PHVA, taking in the stage of making a reduction in the standard time of 39.66 seconds, this due to the improvements in the Skill and condition qualification factors, analyzed in the verification stage, in which an increase in productive activities of 2.57% was obtained, standardizing the filleting procedure through a manual of procedures and training. Concluding that, the application of the study of times and movements increased labor productivity by 1.84 kg / hh.
