Analysis of acceptance and preference of an filter of quinua (Chenopodium quinoa) with kiwicha (Amaranthus caudatus)

Objectives.Sensoriallyanalyze samples of a quinoa filter with kiwicha (Amaranthus caudatus)and quinua (Chenopodium quinoa).
Materials and methods.Preference and acceptability tests were conducted with 40 panelists. The ages of participants were between 17 and 60 years. The preference test and the hedonic test of 7 points were applied, in which attributes such as smell, color and taste were scored. The obtained data were analyzed statistically using the Pearson Chi-Square distribution.
Results.The sample with cinnamon was preferred in 80%, it was also determined that there is no significant difference in the odor attribute, while in the attribute of color and taste there is significant difference.
Conclusion.The consumers showed acceptability of the filter and preference for the sample that has cinnamon.
