Abstract

Objectives.To carry out the study of times and movements to improve the productivity of fillet of mackerel in vegetable oil, in the company Quiaza S.A.C. Chimbote, 2016.

Materials and methods.A pre-experimental study was performed; Developing through a documentary analysis, and direct observation, to eight workers who worked in the operation of filleting and cleaning. The instruments used for a better analysis were the analytical cursogram of the operator, where the movements and movements of the worker were recorded, which was reduced to 94.32 meters, in a total time of 1 hour with 49 minutes, this was based on a diagram of travel; A biannual diagram was used for the description of the movements of the limbs, identifying 24 movements with the new method of work; Theforms and tables of the International Labor Organization were used to standardize the times,

Results.A standard time of 33.52 minutes was obtained; And through the interrogation technique, the new method of work was established.

Concussion.A percentage variation of a 39.11% increase in total productivity is achieved, and a 20.10% increase in the productivity of the cutting and cleaning operation.
