Use of Lean Manufacturing tools to improve the productivity of a canned fish producing company

The purpose of this study was to use lean manufacturing tools in the cooking line of a canning plant to increase productivity. The research is applied type, pre-experimental design, a pre and post test. The population was the activities of the various production lines, the sample was made up of the productivity of the mackerel fillet production process. For the diagnosis, the VSM analysis was carried out, it was determined that the cycle time of the line was 0.48 min/box. During the implementation of the tools, through a 5S compliance checklist, it was initially obtained that only 59% of the established criteria were met; In addition, there was an availability of 70% of the machines on average. During the diagnosis, labor productivity reached a value of 0.68 boxes/H-h, and raw material productivity reached a value of 55.71 boxes/H-h. After the implementation of the 5S methodology and autonomous maintenance, there were increases of 9.6% and 10.5% in the company's main productivity indicators. Concluding that, the application of Lean Manufacturing had a positive impact within the production process.
