Abstract

The objective of the work was to determine the hydration and solubilization conditions by mechanical expression to extract hydrocolloids with maximum yield (% p/p) from Malva sylvestris leaves.Solvent ratio effects were established for hydrationsolute (W/S) of 15,20 and 25 g water / g powder sheetsand maceration times of 30,60 and 90min using as a methodology the design of response surface in factorial arrangement 32and for solubilization by hammers with pressure of 53db at speeds of 424,508 and 592mov / min for times of 60,120 and 180s.The results showed a coefficient of determination of 96.5%, a second order model that was adjusted to the response studied.The conditions to extract hydrocolloids with higher yield (19.21%) in hydration was the W/S ratio of 25 for 30min and for solubilization of 592mov/min for 180s.
