Abstract

The main goal of this research was to determine the content of carotenoid compounds and antioxidant capacity in vitro of the Peruvian Physalis L "Aguaymanto" from the city of Cajamarca. To evaluate the carotene content, a chloroformic extract of Physalis peruviana L was used. It was compared with standard dilutions of beta carotene in petroleum ether through absorbance readings in spectrophotometer Kyntel 1200 at 446 nm. After 7 days of maceration, an 80% hydroalcoholic extract was prepared for the assessment of antioxidant activity by means of the 2,2 - diphenyl - 1 - picrylhydrazil (DPPH) method. Finally, the total carotene content was determined, obtaining 139.73±6.33 ug/100mg and the Inhibition Coefficient to reduce by 50% the concentration of the radical DPPH (IC50) on the part of the hydroalcoholic extract of Physalis peruviana L "Aguaymanto", with values of 556.68 expressed in ug/ml.
