The objective of this project was to investigate granadilla seeds as raw material for the extraction of their oil, two extraction methods were applied, one by solvent using hexane as a reactant, and by cold pressing using a hydraulic press, as these methods are used in the industry. It was characterized as affecting the extraction method in the yield. The physicochemical properties (acidity and peroxide value) and the fatty acid profile. It was obtained as a result that the highest yield of extracted oil is23,475 ± 1.18% solvent, this having higher acidity 3.4526% and peroxide index 15.372 (meq O2 / kg) and a higher concentration of linoleic acid 81.3385%. In the case of oil obtained by pressing, it has a lower acidity of 1,756% and a peroxide value of 6,662 meq O2 / kg and a higher arachidonic acid content of 84,249%. These fatty acids correspond to the so-called Omega 6.
