It was formulated a growth medium for Saccharomyces Cerevisiaefrom Soybean Meal as primary source in two protein concentrations (35 y 47.97 %) and as reinforcements: sucrose (C H O ), dibasic ammonium phosphate 6 12 6 (NH4) HPO , phosphoric acid (H PO ), sodium thiosulfate (Na S O ), water (H O) and citric acid ((C H O ) as 2 4 3 4 2 2 3 2 6 8 7 buffer in different concentrations according to the requirements, under constant aeration now of 0.51 VVM. Evaluation of biomass production was performed by growth kinetics with the Gompertz model. The growth in the medium with 47.97% of protein showed superiority in the medium with 35% of protein; characterized by the -1 greatest specic speed of Saccharomyces cerevisiae growth rate (µ ) and generation time (GT) of 0.86 h y 0.80 máx -1 horas, 0.81 h y 0.86 hours respectively for each medium. For the adaptation phase (λ) and the highest maximum growth (a) was obtained: 0.97 hours and 1.60 for the medium with 45.97% of Protein, as well as 0.63 hours and 1.46 for the medium with 35% of protein of Soybean Meal respectively. The ANOVA test demonstrated statistical significance (p< 0.05, IC 95 %). Comparative Tukey test showed statistical signicance between the medium with 35% and 47.97% of protein.
