Abstract

Microbiological food quality and health hygienic quality of stalls selling ceviche and Potato Huancayo expended on public roads in the district of Florencia de Mora, during the period from January to April 2014. It was determined 48 samples were evaluated by Sanitary Standard Establishing Microbiological Criteria for Health Quality and Safety for Human Food and Beverage Consumption; Likewise, a survey by the health surveillance record MOH was performed. Samples were plated on selective media for the isolation and identification of aerobic mesophiles, coliforms, S. aureus, E. coli, Salmonella spp. Aerobic mesophilic bacteria was found in 87.5% of samples of Potato Huancayo and 62.5% Ceviche, coliforms and E. coli in 100% of samples, S aureus and Salmonella spp in any sample of potato Huancayo and ceviche. Also it was found that 87.5% of the stalls is not acceptable for human consumption and 12% steady state. We conclude that aerobic mesophilic, coliform and E. coli are highly prevalent microorganisms in the samples tested and the behavior of the risk factors of contamination is high.
