The present research is experimental with a post-test only. We worked with three experimental groups, a positive control group and a negative control group. The purpose was to see the antibacterial effect of the Myrciaria dubia, Citrus grandis and Citrus reticulata juice on Escherichia coli and Salmonella tiphy. The sample consisted of fruits such as Myrciaria dubia, Citrus grandis and Citrus reticulata, from La Hermelinda market in Florencia de Mora district. A data collection form was used to record the diameters of the inhibition halos of microbial growth.
For the statistical analysis, the statistical program SPSS 22.0 was used. The differences between the means of inhibition hallos of bacterial growth by the action of the juices were analyzed by means of the ANOVA test with a confidence level of 95%. It was determined that with the juice of Myrciaria dubia against Escherichia coli, halos of inhibition of 16.90 ± 3.45 mm were present, while against Salmonella tiphy 11.19 ± 1.37 mm. In the case of Citrus grandis juice, the halos of growth inhibition for Escherichia coli was 14.52 ± 1.80 mm, and for Salmonella typhi 17.10 ± 2.47 mm. It was also determined that Citrus reticulata did not produce halo inhibition in the growth of Escherichia Coli and against Salmonella typhi, the inhibition halo was 7.57 ± 4.41 mm. It is finally concluded that the juice of Myrciaria dubia and Citrus grandis have an inhibitory effect on the growth of Escherichia coli and Salmonella tiphy, while Citrus reticulata did not show significant antibacterial activity against these microorganisms.
