Abstract

Inflammation is the first response of the immune system to infection or injury, but excessive or inappropriate inflammatory responses may contribute to a range of acute and chronic human diseases. Consumption of omega-3 polyunsaturated fatty acids in the human body allow the regulation of inflammatory processes related to chronic diseases. The Resolvins (Rv) and protectins are local mediators derived from polyunsaturated fatty acids such as omega-3 EPA and DHA that are generated during the spontaneous resolution stage and act locally at sites of inflammation. These mediators regulate the infiltration of polymorphonuclear leukocytes and promotes resolution, by inhibiting of the action of factor NK-B in the gene expression of proinflammatory molecules.
