Application of the Six Sigma Methodology in the Food Industry

This article proposes to enhance the quality and performance in the preparation of sushi in the form of rolls with different flavors by combining the philosophies of Lean Manufacturing and Six Sigma. Documentary nature study, of basic research that proposes a practical application in the food industry that can be useful for companies in this industry. The approach is divided into five stages: problem definition, problem measurement, cause analysis, process improvement, and process control. Lean Manufacturing aims at continuous improvement through waste elimination and process optimization, while Six Sigma focuses on reducing variation and enhancing performance. The proposal focuses on improving the production of a sushi roll manufacturing company. Statistical tools are applied to identify problems and sources of variation. Subsequently, improvements such as implementing 5S and standardizing processes are put into place to increase productivity and reduce waste. The objective is to achieve long-term profitability and productivity enhancement. The integration of both philosophies, Lean Manufacturing and Six Sigma, is deemed feasible, although it is emphasized that it will require a cultural shift within the organization. While the structured methodology with the use of statistical tools is viable, it is recommended to implement the approach in stages and in additional processes after achieving success in the initial phase. In conclusion, the adoption of Lean Six Sigma can lead to significant improvements in the quality and efficiency of sushi production in the food industry.
