The objective was to measure the relationship between statistical process control for sucrose losses in bagasse and productivity in the sugar mill area. The research was non-experimental, with descriptive correlational design. The population and sample was 35 people from the trapiche and laboratory area. For the data collection of the variables, the survey technique and the documentary collection for production data were applied. The graph of control, stability and process capacity was applied, among other tools. The calculations were made with the statistical software Minitab v.17 and Microsoft Excel. The statistical process control achieved an increase in utility in S / 6 569,774 compared to the initial situation. The control chart showed that the process was out of control, therefore, the cause was determined and the process was optimized, achieving a decrease of the average in 0.29% in the period September-December 2016. It was determined that the process was stable with an index of 1.22. It was also determined that the process was incapable, with an index of 0.275; with the respective improvements, the optimum of 2% was reached. The results indicated an improvement in the productivity of 2.25 bags of sugar / t cane in the initial situation to 2.32 bags of sugar / t cane in the proposed situation. It was concluded that the statistical control of processes for sucrose losses in bagasse is significantly related to the productivity in the sugar mill area of the Andahuasi agrarian sugar company S.A.A
